Below, you have a Spanish recipe for "Arroz al Horno" - or Baked Spanish Rice.

It's a hearty, winter meal, using two other ingrediants extremely popular in Spain - spicy, chorizo sausage and healthy chickpeas.

Crumbled strands of wonderful Spanish saffron give the rice its sunny, yellow colour, and beautiful aroma.

To skin tomatoes, just cut a cross in the underneath part, place in boiling water for a minute, then refresh under the cold water tap.

The skin should then peel off easily.

Too lazy to skin them? Cut in half, grate, and discard the skins!

Can't lay your hands on chorizo sausage? Use any spicy sausage ... or blackpudding!

Ingrediants are for a good four servings but, if you prefer less rice, decrease the amount, remembering to reduce stock as well.

Authentic Spanish Rice Recipes - Arroz Al Horno

(Baked Spanish Rice)

Ingrediants

  • 4 cups rice
  • 8 cups stock
  • 200 gr pork - cut into bite-sized pieces
  • 1 cup pre-cooked chickpeas
  • 1 potato - sliced into thick rounds
  • 2 ripe tomatoes - skinned and chopped
  • 2 chorizo sausages
  • 1 head of garlic
  • 3 strands saffron - crumbled
  • Salt
  • Olive oil
  • Method

    1. Heat oil in pan and sauté pork.
    2. Add potato rounds and colour.
    3. Introduce chickpeas and tomatoes.
    4. Lower heat and cook gently for 5-7 minutes.
    5. Mix in chorizo and rice and stir well.
    6. Pour in stock and crumbled saffron.
    7. Bring to boil.
    8. Place in a casserole dish.
    9. Place a halved garlic head on top.
    10. Cook in a medium oven for about 45 minutes.
    11. Remove garlic head before serving.
