Chicken with Rice



Mouth-watering Spanish Rice Recipes which warm you through on a winter's day include this wonderful recipe for Chicken with Rice - or "Pollo con Arroz".

A simple, family recipe, based on two popular and economical ingrediants - chicken and rice - it's cooked on top of the stove. No need to use the oven!

Prefer your chicken completely fat-free?

Pull the skin off before chopping into smaller pieces.

Be careful not to burn paprika when adding to your recipes - it makes it taste bitter!

And a spoonful of chopped parsley adds a nice finishing touch to almost any savoury recipe.

Spanish Rice Recipes - Pollo Con Arroz

(Chicken With Rice)

Ingrediants - for 4 people.

  • 1 chicken - chopped into pieces
  • 2 cups rice
  • 1 onion - peeled and chopped
  • 4 cloves garlic - peeled and chopped
  • 1 red pepper - cored, de-seeded and finely chopped
  • 1 teaspoon paprika
  • 3 strands saffron - crumbled
  • 4 cups chicken stock
  • 1 cup dry white wine
  • 1 dessertspoon reshly chopped parsley
  • Olive oil
  • Seasoning
  • Method

    1. Heat oil in a deep pan and sauté chicken pieces.
    2. Remove chicken and set aside.
    3. Add onion, garlic and red pepper to oil.
    4. Cook over a low heat for 10-15 minutes.
    5. Stir in the rice and cook 1 minute.
    6. Stir in saffron, paprika, stock and wine.
    7. Bring to the boil.
    8. Simmer for 15 minutes.
    9. Stir chicken pieces into rice mixture and cover.
    10. Simmer for 30 minutes, stirring occasionally.
    11. Adjust seasoning, sprinkle with parsley and serve.
