We start off below with a recipe for Garlic Lemon Chicken.

Chicken is a relatively economical dish in most countries. Being white meat means it's healthy, plus you can easily pull off all the skin before cooking so that the meat is fat free.

The following recipe includes two products for which Spain is famous - garlic (anti-oxidant) and lemon (vitamin C).

The lemon zest should not include any of the white pith - which is bitter.

Saffron adds a yellowish colour to the dish - plus a wonderful aroma.

authentic spanish food recipes - pollo al ajo (garlic chicken)

Ingrediants - for 4 people

  • 1 chicken - chopped into smallish pieces
  • Half head of garlic - peeled and crushed with salt
  • 1 cup of water
  • Juice and zest of 1 lemon
  • 3 strands of saffron - crumbled
  • Olive oil
  • Seasoning

  • Method

    1. Heat oil in pan.
    2. Add chicken pieces and sauté until golden     brown.
    3. Season and place in large, shallow casserole.
    4. Sauté crushed garlic in pan.
    5. Stir in water, zest of lemon and saffron.
    6. Bring to the boil and simmer 3 minutes.
    7. Remove from heat and mix in lemon juice.
    8. Pour over chicken.
    7. Bake at 170C for 45 minutes - or chicken    tender.
