Horchata is a delicious, well-known, non-alcoholic drink in Spain - originally from the Valencia area.
However, it's usually made out of chufas or tiger nuts.
But the recipe below is rather unusual, for it's an horchata made from rice - not the usual tiger nuts - and is popular in Mexico.
Use short-grained, pudding rice.
And, with this recipe, you can use all the lemon peel - pith included - but remember to remove before liquidising.

Ingredients
- 150 gr pudding rice
- 1 litre water
- 150 gr sugar
- Peel of one lemon
- Little powdered cinnamon
Method
- Soak rice in cold water with lemon peel for 24 hours.
- Remove lemon peel.
- Liquidise water and rice with electric blender.
- Add a little extra water if necessary.
- Stir in sugar.
- Leave in fridge until really cold.
- Sprinkle with cinnamon before serving.
