Horchata is a delicious, well-known, non-alcoholic drink in Spain - originally from the Valencia area.

However, it's usually made out of chufas or tiger nuts.

You can easily buy horchata in supermarkets out here in Spain - or enjoy one at most cafés.

But the recipe below is rather unusual, for it's an horchata made from rice - not the usual tiger nuts.

After all, not everyone has tiger nuts readily-available in their cupboards!

Use short-grained pudding rice.

With this recipe, you can use all the lemon peel - pith included - but remember to remove before liquidising!

Ingrediants

  • 150 gr pudding rice
  • 1 litre water
  • 150 gr sugar
  • Peel of one lemon
  • Little powdered cinnamon

    Method

    1. Soak rice in cold water with lemon peel for 24 hours.
    2. Remove lemon peel.
    3. Liquidise water and rice with electric blender.
    4. Add a little extra water if necessary.
    5. Stir in sugar.
    6. Leave in fridge until really cold.
    7. Sprinkle with cinnamon before serving.
