horchata de chufas



A well-known, non-alcoholic spanish drink is the deliciously creamy horchata de chufas.

Originating from the Valencia Region of Spain, it's made out of chufas or tiger nuts.

You'll find it easily enough in most Spanish supermarkets.

However, below is a simple recipe in case you wish to make your own.

Basically, just soak the nuts overnight, blend with the other ingrediants, cool and sieve.

The powdered cinnamon is optional.

With the lemon zest, remember to use only the yellow part of the peel, not the white pith - which has a bitter taste.

horchata de chufas

Ingrediants

  • 250 gr chufas/tiger nuts
  • 100 gr sugar
  • Zest of 1 lemon
  • 1 litre water
  • Little powdered cinnamon
  • Method

    1. Clean nuts.
    2. Leave to soak overnight.
    3. Drain.
    4. Using electric mixer blend nuts, sugar, zest and water.
    5. Leave in fridge for good 2-3 hours.
    6. Pass liquid through sieve.
    7. Pour into glasses.
    8. Serve cold with a sprinkling of cinnamon.
