spanish tapas recipes - tiger mussels (mejillones tigre)Ingrediants - for 4 people 500 gr fresh mussels - steamed, and finely chopped1 onion - peeled and finely chopped2 cloves garlic - peeled and finely chopped1 hot chilli pepper - finely chopped50 gr flour200 ml milkSeasoned flour for coating1 egg - beaten150 gr breadcrumbsOlive oilMethod 1. Heat a little oil in a pan, add the onion and garlic, and soften. 2. Mix in the chopped chilli and mussels. 3. Season, and cook for 2-3 minutes. 4. Stir in the flour and cook for a minute. 5. Whisk in the milk and bring to boil - stirring. 6. Set mixture aside to cool - it will thicken further. 7. Spoon mixture into mussel shells. 8. Coat in flour, dip in egg and cover with breadcrumbs. 9. Deep fry in hot oil until golden, and serve.
