One of the most popular tapas recipes using mushrooms are the well-known "garlic mushrooms" or "champiñones al ajillo".The garlic really brings out the flavour of the mushrooms - and is helped along with chopped parsley. garlic mushrooms (champiñones al ajillo)Ingrediants - for 4 people 400 gr mushrooms - thickly sliced4 cloves garlic - peeled1 red hot chilli pepper - chopped1 tablespoon freshly-chopped parsleyOlive oilSeasoningMethod 1. Slice two of the garlic cloves. 2. Heat a little oil in a pan. 3. Tip in sliced garlic cloves along with chopped chilli. 4. Cook for a minute, then mix in mushrooms and sauté. 5. Crush remaining garlic cloves with a little salt. 6. Mix in parsley, plus sufficient oil to form a paste. 7. Stir the mixture in with the mushrooms. 8. Cook a further 2-3 minutes. 9. Sprinkle with black pepper and serve.
